Thank God It’s Friday: Chili Con Carne à la Chanel Mama! 

 I love to cook and I love to eat, I always try to look for new recipes and dishes so I don’t get bored, most importantly, so Adam and his dad don’t get bored lol. I usually plan my meals for the week every Saturday, that gives me a chance to prepare my grocery list for Sunday, because Sunday is Grocery shopping day! While planning my meals, I try to look online for diverse recipes from every corner of the world. So today I made Chili Con Carne and my family loved it!! Let’s make it together 😉 You will need the following: 

2 tablespoons olive oil

1 onion (cut into small pieces)

3 chopped garlic cloves 

250g minced meat

1 capsicum (cut into cubes) 

1 tomato (cut into cubes)

2 tablespoons tomato paste 

400g kidney beans 

1 teaspoon Cumin 

1/2 teaspoon Cayenne pepper 

Salt and pepper 

1 cup of water 

In a pan, pour the oil, then add the onion, garlic, season with salt and pepper, leave it simmer for 5 minutes then add the meat and the cumin. After 5 to 6 minutes add the capsicum, tomato, tomato paste, cayenne pepper and the water and let it cook for about 30 minutes.
Finally add the kidney beans. Once they are cooked, your Chili Con Carne is ready! 


Thank God It’s Friday: My Fish Curry!!! 


Hello from Bahrain! Currently, I am sitting on my sofa, where I do all of my blogging, and half of my reading (the other half I do it in my bed). In my pyjamas, and my hair is up in a messy bun. It is very quiet over here, and the reason is because my little rascal is asleep, after a long day of running around, swimming in the pool, playing with some home-made play dough, going out to see the birds, a trip to the supermarket and a football match with his mama lol! So yeah I am enjoying every minute of this precious silence! I do miss him though and can’t wait for tomorrow, to do it all over again. 

Today’s lunch was absolutely delicious, so I decided to share the recipe with you guys! And yes it is MY fish curry! A recipe I came up with, tried it and my husband loved it! 

 You will need: 

Fish fillets (any white fish will do) 

The juice of one lemon 

1 onion

Ginger (the size of a thumb) 

2 garlic cloves

1 chilli

Parsley and Coriander (few leaves each) 

1/2 cup of chopped lemongrass 

1 tomato (cut into pieces) 

200ml coconut milk

50ml cooking cream  

2 tablespoons fish sauce 

1 tablespoon of sugar 

1 tablespoon of butter 

After you clean the fish, season it very well with salt and pepper, and add the lemon juice, leave it for about 20 minutes.

In a blender, mix the onion, garlic, ginger, chilli, lemongrass, parsley and coriander, until you get a paste. In a pan, put the butter and add the paste you blended earlier, season with salt and pepper, let it simmer, then add the tomato, sugar and fish sauce. Place the fish fillets in the pan and let it cook for 5 minutes, then add the coconut milk and the cooking cream. When the fish is cooked your curry is ready!

Thank God It’s Friday: Something Is Fishy…


Hello friends! Happy Friday! 

So… it has been a week since we left Morocco, and we already miss it terribly! We miss the beautiful cool weather, (especially that the weather in Bahrain is so hot and humid now). We also miss the family and our loved ones. Adam definitely misses the morning trips to the park, with his grandfather, and i miss my mom’s cooking! That’s exactly why, today i decided that our lunch will be inspired from the Moroccan cuisine: Fish with Shermoula! Shermoula is basically the mix that would marinate the fish; you can use any type of fish, and either, grill it, fry it or simply bake it! It is so easy and this marinade makes any type of fish tastes absolutely amazing! 

You will only need: 

1 tablespoon salt

1 tablespoon pepper 

1 tablespoon paprika 

1 tablespoon cumin

3 crushed garlic cloves

The juice of one lemon 

Parsley and coriander (a handful of each) 

1 small chilli cut into small pieces

Mix all the ingredients together in a bowl, and marinade the fish in it, preferably for two hours or more, but if you were in a hurry, just give the fish a good rub with the marinade and it should be alright.

Thank God It’s Friday: What’s in the Oven?


Every day is a new day! You open your eyes, and you wonder what surprises might this day bring!? Then you get caught up in the busyness of every day’s life; what has to be done, what should be done. You worry, you think and overthink! You go on with your day and you try your best to make it a good one! To me, I wake up every day with an empty tank, that I need to fill up before I put my head right back on that pillow, that same night! I fill it up with many things!! Filling this tank is crucial for my night sleep, if the tank is full, then I have this sense of fulfillment and satisfaction that allows me to close my eyes and fly to La La land! Therefore I have learnt to do just that! I fill my tank with love and kindness, positivity and optimism! i fill it with a toddler’s smiles and laughter, with words and prayers from my parents. I have to see friends, talk to my precious people. I have to go out and see the sun! I have to stop and admire the blue sky. I have to take tons of pictures to document every single day of this cherished life! And Fridays are just the epitome of all that! I love them because a full night of sleep is almost always guaranteed! My Fridays are always filled with family, friends, and all the good things that come along with them! Today was a little especial though! A small celebration of my birthday (even though my birthday was two weeks ago) creeped into today’s schedule- it was a surprise-, we went for a brunch to Ritz Cartlton Bahrain, we were sitting by the pool, in this fantastic weather, the food was succulent. This was one of the very few hotels in Bahrain, that offers a wild range of vegetarian food for people like me( we tried The Four Seasons Bahrain, last week and all I had was a salad and some cold mezze!! Ughhh) . (here i share some photos from today)






Okay, now let’s talk about what is in the oven today, shall we?!! This dish often saves my days! It only takes about twenty minutes, and it is delicious!!! All you need is :

Salmon fillets (two or three)

2 tablespoons lemon juice

1 small onion (cut into stripes)

1 capsicum (cut into cubes)

½ cup parmesan cheese

1 teaspoon dried thyme

Salt and pepper

All you need to do is lay your salmon fillet on a dish, add the lemon juice, season it with salt, pepper and thyme, cover it with the onion and capsicum, then add the Parmesan cheese on top and place the dish in the oven, I usually leave it about 20 minutes to cook and voila!!

Thank God It’s Friday: What’s For Breakfast??

Hello there!

It is funny how some food can take you straight back to the origin of a memory. Every item on today’s menu (lunch), magically took me back to the beautiful home, where I spent all those beautiful years of my childhood! May be it is the appetizing smell of those vegetables being cooked, or the delicate aroma coming from that HARIRA (a Moroccan soup that I will soon post its recipe), on the stove. One thing I am sure of, though, is that with every stir and every move, I saw my mom in the kitchen, passionately and lovingly doing what she did best, while I would sneak in and be the littlest food thief I always was. I saw my mom in her apron, looking so pretty and gracious. Gently yet efficiently, transforming few items, into this gorgeous looking meal, that would take all of us to heaven!

Today we had some very precious people over, for lunch, and just like every time, we talked and talked and talked for hours, over lunch! It is always refreshing to spend some valuable time, with some healthy minds and virtuous souls. People who can teach you things you never knew they even existed! Just as your body needs food, your mind needs these inspiring and insightful conversations with people who fill your world with positivity and serenity!

My menu today was 100% Moroccan; however, today’s recipe is of none of the dishes I have cooked! It is not even my own recipe! Today my husband nicely and sweetly, suggested sharing with all of us, his recipe for making jam! He makes the best jams ever, so why not take advantage of his skills and expertise, right?…. yes RIGHT!

So without further ado, here is my husband’s easy and quick recipe for jam:

1Kg of any fruit you have

2 cups of sugar

1 lemon (we will use both, the zest and the juice)

Put the fruits in a pot , after washing and drying them, add the sugar, the lemon juice and zest and let it simmer over a low heat for about an hour, or until the liquid gels over a cold plate. If you think you have overcooked it, just add some water and cook it some more!

Thank God It’s Friday: Hello Tajine!!




Hello Friday and Hello Tajine!!

This Friday, was a dusty one, it was windy and cloudy!  And a good day to stay home, drink some hot chocolate, while little peanut runs around, telling me all kind of stories, while I nod and laugh and pretend that I know exactly what he is talking about! Moments like these, make this time of my life magnificently awesome! It is the season of tiny things and a laughing baby and a house that never seems to be truly quiet. A season of a baby turning into a toddler. A season of me teaching small tiny things, to a small tiny person, and learning from everything he is! A season of tiny pajamas and the tiniest socks! A season that makes me feel sad, happy and bittersweet! A season, I know will end soon and I am not sure how ready I am for that, yet a new one will begin and I know I will be in love with it too, and it will be my favorite then, just like this one is my favorite now!  I sip my hot chocolate and try to be present! Be here. I take a second and I try to capture it all! The smiles, the cries, the running around, and the little kisses coming my way every time he passes by!

It is also the season of good food and yummy dishes, today’s dish is Moroccan and vegetarian. Here, I will share my way of making it. As all my other recipes, this one is easy, quick and of course super delicious!

All you need is:

1 tbsp of olive oil

1 cup of water

1 onion (cut into small cubes)

2 potatoes (cut into cubes)

1 carrot (cut into pieces)

1 tomato (cut into small pieces)

½  tsp salt

1 tsp pepper

1 tsp paprika

1 tsp ginger powder

Parsley and coriander (few leaves each)

Few olives

Heat up the pot, pour the oil and  add the onion and the spices, let the onions sweat, then add the tomato, stir, and add the water. Add the carrots and potatoes and let them cook over a low heat. When the vegetables are cooked add the parsley and coriander, then the olives,  stir for 3 minutes and Voila!!

Of course you can have your Tajine with chicken or meat, just add it with the onion and give it some time to cook before you add the vegetables!

Thank God It’s Friday: A Trip To Tanzania! 



Writing these Friday posts, only made me realize how fast time flies by! It feels just like yesterday that I published last Friday’s post! Yet it was exactly a week ago! This kind of revelations makes me extremely emotional! So tonight while putting little peanut to sleep, I hugged him a little tighter, and a little longer. There I sat in the dark, with a sleeping baby in my arms, and I just could not bring myself to leave! I stayed there; I closed my eyes and tried to remember Adam as a newborn, and his newborn smell; him on my chest, all frog-legged and squishy. I felt a sting in my chest! i felt sad that he is no longer that tiny little baby, but at the same time, i felt exceptionally lucky! I wanted to make the most of our “now”! I wanted our “now” to never end! With each breath I was taking, I was hoping I could inhale a piece of him so I can finally put him back where he belongs to: my heart! Thoughts like this one, make me not want to sleep, ever again. Make me want to spend every minute of my life looking at the beautiful sky and admiring the trees and the flowers. Make me want to jump and sing and do silly things! Make me write emotional posts like this one!

So as every Friday, I try to share a recipe of a dish I like, today’s dish is called “Maharague” and it is just a fantastic taste of Zanzibar. This dish is the first eastern-African dish I ever made. As always, I try to shrink the recipes to fit into my busy schedule, so this is my easy and simple way of making Maharague, all you need is:

2 tbsp. olive oil

1 onion

2 garlic cloves

1 inch piece of fresh ginger

1 Chili Pepper

Parsley and Coriander (few leaves each)

1 tomato (cut into small pieces)

1 tbsp. of creamy peanut butter

½ tsp. salt

½ tsp. pepper

½ tsp. Turmeric powder

1 vegetable stock cube (chicken or beef stock can do too)

3 tins of red kidney beans

300 ml Coconut milk

Blend the onion, garlic, ginger and chili all together. Heat the olive oil in a pot and add the mix to it. Add the spices and the vegetable stock; let them simmer for 5 minutes. Add the tomato then the red kidney beans. After 5 more minutes, add the peanut butter, parsley and coriander then the coconut milk. Leave it under low heat until it thickens and voila! Bon Appetit!

I usually have this delicious dish with some brown rice, and some roasted chicken for my husband! We both love it and have it at least once a week! Hope you try it and like it too. Ooh and of course: Hakuna Matata!!!!!!
