Thank God It’s Friday: Quick, Easy, And Yummy… 

  

Sometimes all you need is a day with your oldest, dearest friend and your beautiful, loving aunt and her cheerful, easy-going daughter! Reminiscing about your wedding day five years ago, and talking about how fast life goes by and how beautiful it all is! So Thankful for these beautiful people with whom I share a very special bond. You know…. those people who are very close to your heart, and who have been there for you in every stage of this life! People whom you talk to about 4 or 5 times a day or maybe days and days go by without hearing from them, yet once you see them you pick up right from where you left! 

So yes… My day was just what I needed! Fresh, full of love ….. And food! Yup foooooood! Talking about food, today I will be sharing a dessert recipe, a delicious and super easy to make dessert! Here is what you will need: 

15g Butter 

2 Tbsp powdered sugar

4 Bananas (peeled and cut into 3 pieces)

100ml double cream 

In a pan, put the butter (over medium heat), once it starts melting add the sugar. Cook for 1 to 2 minutes. Add the bananas, cook for another 1 minute. Then add the cream and stir! Voila…!!

Thank God It’s Friday: Gluten-Free Gone French .. 

  

  
The beauty of every single morning is the ability for a fresh start. A chance to be a better person, to change what’s making you unhappy and look for ways to be happy. A new day for new memories, new smiles, new mistakes and new opportunities! 

So with every sunrise, I count my blessings and I thank God for what I have. I pray for what I wish to have. And food is always one of the things I am extremely grateful for! 

Today I made these amazing gluten-free “Crépes“, and was so pleased with the result that I decided to share the recipe with you! I have to say, it is the easiest and fluffiest thing you will ever make 🙂 

You will need: 
1 ripe banana, with spots on the skin
2 whole eggs 

Butter, for frying-pan

Combine the banana and eggs in a blender, and blend until completely smooth. Melt the butter in a skillet over medium heat, and pour a small amount of batter into the hot skillet. Cook for two minutes, or until the edges begin to look cooked, then flip and cook for another 1-2 minutes! And voila!

Thank God It’s Friday: My Fish Curry!!! 

  

Hello from Bahrain! Currently, I am sitting on my sofa, where I do all of my blogging, and half of my reading (the other half I do it in my bed). In my pyjamas, and my hair is up in a messy bun. It is very quiet over here, and the reason is because my little rascal is asleep, after a long day of running around, swimming in the pool, playing with some home-made play dough, going out to see the birds, a trip to the supermarket and a football match with his mama lol! So yeah I am enjoying every minute of this precious silence! I do miss him though and can’t wait for tomorrow, to do it all over again. 

Today’s lunch was absolutely delicious, so I decided to share the recipe with you guys! And yes it is MY fish curry! A recipe I came up with, tried it and my husband loved it! 

 You will need: 

Fish fillets (any white fish will do) 

The juice of one lemon 

1 onion

Ginger (the size of a thumb) 

2 garlic cloves

1 chilli

Parsley and Coriander (few leaves each) 

1/2 cup of chopped lemongrass 

1 tomato (cut into pieces) 

200ml coconut milk

50ml cooking cream  

2 tablespoons fish sauce 

1 tablespoon of sugar 

1 tablespoon of butter 

After you clean the fish, season it very well with salt and pepper, and add the lemon juice, leave it for about 20 minutes.

In a blender, mix the onion, garlic, ginger, chilli, lemongrass, parsley and coriander, until you get a paste. In a pan, put the butter and add the paste you blended earlier, season with salt and pepper, let it simmer, then add the tomato, sugar and fish sauce. Place the fish fillets in the pan and let it cook for 5 minutes, then add the coconut milk and the cooking cream. When the fish is cooked your curry is ready!
